We like the One-Pan Pork Chops with Feta, Snap Peas and Mint—recipe’s on our blog, April 25, 2023 (click the date to find it). Feta with pork sounds odd on paper, but it works beautifully. The salty, tangy feta cuts through the richness of the pork, keeping the whole dish balanced and lively rather than heavy.
We started with an asparagus salad topped with burrata stracciatella—the creamy interior of the burrata—along with hazelnuts and a drizzle of brown butter. A simple first course, but rich, nutty, and just indulgent enough to set the tone.
