Lobster Risotto

 

Henry's Cuisine  meets McCall's. Henry's, if we are dining alone and get to take home leftovers, gives us an opportunity to make different fabulous dinners from the leftovers. We felt we didn't have enough Lobster (one can never have too much) so we augmented it with Lobster Tails we purchased from McCalls.Tonight we went use it to make Lobster Risotto. We started with a Nectarine Salad with Almonds. All the fruit this year has been excellent. Nectarines were especially sweet.
