Peaches and Corn




We had plan to go out to eat at a neighborhood restaurant (Papilles) and had read about an interesting salad on their menu. It turned out we couldn’t make it to the restaurant, but we decided to make our version of the salad based upon their menu description. It was a Peach and Burrata Salad. We had some fabulous peaches that we had picked up at the farmers market that we could use. This is about as easy a salad as you can make. We dressed some greens the sliced the peaches over the them and topped with Burrata and almonds. We had a delicious summer salad.
