Setas con Huevos (Mushrooms and eggs and Croutons)

 

We missed our opportunity. So sad! When we were in Madrid and Valencia in the fall of 2022, we never ordered Setas con Huevos. We didn't even know about it. A very good Spanish Restaurant opened in our neighborhood: Bar Muruno. We went there with Shumon and he said the Setas con Huevos is his favorite there! We ordered it and loved it! We have had it several times at the restaurant. We decided to make it ourselves at home. We hound a recipe and Cathy modified it by using our homemade Croutons and adding Sherry Vinegar. We love it!

Mushroom and Crushed Egg Tapas (Tapas de Setas con Huevo)

Inspired by Bar Muruno.

Sauté mushrooms and Garlic.

Salt and Pepper to taste

Toss in Croutons and Sherry Vinegar.

Fry eggs in separate pan, place sunny-side up in center of mushroom mixture. Sprinkle with Parsley and serve.
