Zucchini Pasta is a favorite of ours. It is another dish that makes me believe I could become a vegetarian. The key to the dish is too buy more Zucchinis than you think you need. They really shrink when sautéed. Brown them real well. It also helps if you have a Cuisinart to automate the slicing of the Zucchini into this slices. I love this dish.
