Rici-e-Bici
Spring to us means Rici-e-Bici. You need to start with lots of fresh spring Peas. This dish was enhanced because our friend Guillermo sent us a fresh aged Parmesan Cheese from Italy. The Parmesan was far different from what we usually get at the store. It was much more intense with a slightly sour aroma. We loved it and thank him!
