Chilaquiles

We were in Mexico City for my birthday and every day for breakfast they served Chilaquiles. When we returned to Los Angeles and went shopping at Gelson's they had a large assortment of Hatch Chiles that had just arrived from New Mexico. On a whim, I checked to see if they have bottled Hatch Chilies and they did. I sort of winged the recipe starting with the one from the Border Grill Cookbook (to get the ingredients). We just layered the chips and cheese and Sauces. It was a hit!
