We hadn’t used the Egg for awhile and decided to smoke a
salmon in it. We used the recipe for Honey-Cured, Smoked Salmon in Cooking with Fire and Smoke by Phillip

With
the smoked salmon we served another favorite: Fennel, cherry tomato and crumble gratin
from Ottolenghi The Cookbook by Yotam Ottolenghi Sami Tamimi. We love this dish! The sweetness of the crust

We also made Roast potato salad with rosemary and garlic from Tender by Nigel Slater. I love the taste of the mustard vignette on the roasted potatoes.
