We love Fava Bean Pasta, and this was our first of the year. This version was exceptional. Cathy thinks it is because of the Eggs we purchased at McCall's. We will buy our Eggs there from now on.
Fava’s come into the market in the spring. Tom grows them in his garden and gave us some. They require double peeling: first you remove them from the pod, then give the beans a quick boil so you can pinch off the skin, leaving just the beautiful Fava Bean inside. From a huge volume of Fava Beans, you wind up with only a cup or cup and a half of shelled beans. It is best NOT to cut your fingernails before you start shelling the beans.
