Chicken and Fig

Summer Melon Salad



I went to the Farmer's Market and bought fresh figs. Chicken and Fig is one of our favorite dishes to make when figs are in season. We have made it many times. We started with a Melon and Speck Salad. We have found that Speck is smokier and tastier than Prosciutto. I used to serve the melon in the rind, but I have decided I like it better cut out of the rind and diced. I sprinkled some unsalted Peanuts on the salad to add texture. Sometimes I squeeze a Lime over the melon.
