Risotto of the Vigil







Every year around Christmas Time we make Risotto of the Vigil. We liked it so much that we decided to make it again this January. It has a lot of ingredients in it, but it is worth the effort. The recipe makes a lot and we had for several nights (it makes great leftovers) and it also freezes well.
