Porchetta and Potato Nik

I live pork! Everyone seems to like pork. McCall’s Meat and Fish prepared a Porchetta for us. All we needed to do was pop it in the over for a few hours. It was delicious. The skin gets very crispy. With the Porchetta we made Potatoes Nik. Potatoes Nik is like a gigantic potato pancake. Really crispy on the outside. It is made in a cast iron skillet.
